Flourless Two Ingredient Pancakes – Taste 'N' Dash
Happy Monday Folks! Hope you had a good weekend. I spent the weekend with some of my favorite girlfriends which included lots of juicy gossip, a yummy dinner and lounging around all day Sunday.
But to kick off the weekend I started Saturday with pancakes for breakfast but not just your ordinary pancakes. I had flourless pancakes!!! Yes, flourless, gluten free and high in protein pancakes. This is very popular with health conscious folks and health/fit bloggers these days. I have been seeing this all over the internet so I had to give it a try and so glad I did.
All you need is a banana and two eggs. That’s it!! Super easy, tastes great and very healthy. Now you would think the banana flavor would be overpowering but not the case at all.
Mash the banana in a bowl with a fork.
Add the two eggs and whisk away with a fork. I decided at the last minute to sprinkle a dash of cinnamon and a splash of vanilla. Totally optional.
Heat up a non stick pan with cooking spray on medium heat. Pour medium size amount of batter and let sit for about 30 to 45 seconds or until golden brown. Flip it to the other side for another 30 to 45 seconds.
Repeat. I was able to get four medium size pancakes.
Okay, now lets dress up our pancakes.
I opted for a few blueberries, raspberries and maple syrup.
Dig in!!
Okay, I may have gone a little over board on the maple syrup but boy was it good. 😉
By the way… I made these pancakes again for Sunday dinner. This time I added 1 teaspoon of baking powder and they came out a little fluffier which I enjoyed. Either way is good but wanted to let you know.

Serves 1
- 1 banana, medium
- 2 eggs
- Cooking spray
- A splash of Vanilla (optional)
- A dash of Cinnamon (optional)
- Mash banana in a bowl with a fork.
- Whisk in the eggs with the fork and combine with the banana.
- Heat a non stick pan with cooking spray on medium heat.
- Pour medium size amount of batter in the pan. Let sit for 30 to 45 seconds or until golden brown. Flip over and let sit for another 30 to 45 seconds.
- Repeat until batter is gone.
- Dress up your pancakes with berries and maple syrup.
- Yields four medium size pancakes for one serving.
- Honey and agave can substitute the maple syrup.
- 1 teaspoon of baking powder will provide a fluffy pancake.
