Frittata Time… Sweet Potato, Bacon & Cheddar Cheese – Taste 'N' Dash

Anytime I am having friends over for brunch I tend to always make a Frittata.  It’s simple but yet so satisfying.  

For those of you not familiar with a frittata, it is an Italian omelette or a quiche minus the crust.  Frittata is an egg base with some sort of cheese, meat and vegetable filling.  Basically, if you have any leftovers in the fridge and not sure what to do… whip up a frittata.  

I am also going to show you two ways to bake the frittata… as a whole and in an individual size.  A one egg dish.  This wasn’t the plan at first but I had way too much of one ingredient.  Either way is great just depends on your preference.

For this version I decided to go with eggs of course, sweet potato, bacon, onion and cheddar cheese.

Preheat oven to 375F.  Grease baking dish with either butter, olive oil or cooking spray.

Place entire package of bacon on a baking sheet and bake for 18-20 minutes.  Slightly crispy.  Relocate to a plate with a paper towel to soak up the bacon fat.  Cut into one inch pieces.

I like to get a jump start on the sweet potatoes.  Peel the sweet potatoes and place in the microwave for seven minutes.  Dice like shown in picture below.

While the bacon and the sweet potatoes are getting busy… cut the medium onion in half and slice.  Place into a non stick skillet with a dab of butter and pepper.  Saute on medium heat for 10 minutes.

There are two ways about doing this when baking as a whole…. you can assemble and cook the frittata in the same non stick skillet that you sauted the onions in or you can use any sort of baking dish.  I chose to use a cake pan.  Up to you. The larger non stick pan that I usually use was occupied at the time and the one I used for the onions was just a tad small.   

Okay, lets assemble.  Add 1 1/2 cup of the diced sweet potatoes to the greased baking dish.  Since I had too many sweet potatoes I put the rest to the side and I will show you in a sec what I did rather than waste the remaining.  

Add the onions and 1 cup chopped bacon to the baking dish.  (This also meant I had to reserve a little of the bacon and onions too) Since I cooked the entire package of bacon I had enough and also to serve with breakfast.

Spread 1/2 cup of shredded cheddar cheese on top then pour the nine beaten eggs over.  

Make sure the eggs are evenly distributed.  Sprinkle about 1/4 cup of the cheddar cheese on top and pepper.  Did you notice I did not use salt?  With the bacon and cheddar cheese I figured salt was unnecessary.  It all depends on the ingredients you use.  

Bake in the oven at 375F for 25- 30 minutes, until set in the middle and lightly brown. 

Okay, with the extra sweet potatoes, bacon and onions I decided to place in a muffin pan.  I happen to have a square muffin pan but round will do too.  (The remaining ingredients were only enough for four)

Grease the pan and evenly distribute the ingredients.  Since the onions were sliced I had to chop the onions in order to have enough for four like shown below.

Sprinkle about two tablespoons of shredded cheddar cheese then pour beaten egg batter over.  One egg per cup.

Bake in the oven at at 375F for 25 to 30 minutes, lightly brown.

Remove from oven and cool for five minutes.  You can serve right from the pan or transfer to a plate.

Serve with fruit, avocado, toast and more bacon!!

Serves 6

  1. 1 cup bacon, chopped
  2. 1 1/2 cup sweet potatoes, 3 small diced
  3. 1 tablespoon butter
  4. 1 medium onion
  5. 3/4 cup shredded cheddar cheese
  6. 9 eggs, beaten
  7. Pepper
  1. Preheat oven to 375F.
  2. Grease baking dish for the frittata with cooking spray, butter or olive oil. If you are going to use a nonstick pan then you can skip.
  3. Place bacon on baking sheet and bake for 18 to 20 minutes. Relocate to a plate with a paper towel to soak up the bacon fat. Cut into one inch pieces.
  4. Peel the sweet potatoes and place in the microwave for 7 minutes. Remove and dice into small bite sizes.
  5. Heat one tablespoon of butter in a non stick pan over medium heat. Add sliced onions and cook for 10 minutes.
  6. Add the sweet potatoes, bacon and onions to the greased baking dish and spread evenly.
  7. Sprinkle 1/2 cup of shredded cheddar cheese on top.
  8. Whisk eggs and pour over mixture. Make sure to evenly distribute.
  9. Sprinkle 1/4 cup of shredded cheese and pepper.
  10. Bake at 375F for 25 to 30 minutes. Middle must be set and lightly brown.
  1. Serve with toast, fruit, avocado and more bacon.
  2. Quantity of ingredients is for the one dish. Not including the extra for the muffin pan.
