Roasted Chicken Thighs with Lemon, Garlic and Oregano – Taste 'N' Dash

Hey there!!  Hope your week is off to a great start.  Have you decided what you are cooking for dinner tonight?  Not yet?!?!?  Well here is a simple recipe that will have your family grinning from ear to ear.

Roasted boneless chicken thighs with lemon, garlic and oregano.  It’s simple, inexpensive and from the looks of it you can pretend that you were slaving all evening in the kitchen.  But truth be told, this little number is effortless and can be prepped in 15 minutes then pop it in the oven.

Lets get to work and gather the ingredients… boneless chicken thighs, onions, garlic, lemon juice, olive oil, oregano and parsley for the garnish.  

Preheat oven to 375F.  

Place the chicken thighs in a baking dish and while you’re at it add a few garlic cloves with the skin on. (Excuse the blurry photo)

Combine in a bowl the chopped onions, garlic, lemon juice, zest of one lemon, olive oil, oregano and dash of salt and pepper.  

 Pour over chicken and evenly distribute making sure the chicken has been coated with the mixture.

Add a few lemon wedges and bake for 50 minutes.  

Remove from oven and place in the broiler for 5 more minutes.  

I love a little crispy top like shown below.  Look at the lemon/olive oil juice and the bits of onions.  Tasty!!

Cool for five minutes.  Garnish with parsley and a pinch of salt and pepper.

Serve with basmati rice and salad.  Make sure to add some of the onion bits with the lemony olive oil juice over the chicken and rice.

And don’t forget to grab one of the roasted garlic cloves and smear all over your chicken thighs.

Roasted Chicken Thighs with Lemon, Oregano and Garlic

Serves 6

  1. 3lbs boneless chicken thighs
  2. 1 large onion, chopped
  3. 10 garlic cloves (5 chopped and 5 whole for roasting)
  4. 2 tablespoon oregano
  5. 1/2 cup olive oil
  6. 3 lemons (2 lemons juiced and 1 lemon cut in wedges)
  7. Zest of one lemon
  8. Salt and pepper
  9. Handfull chopped parsley
  1. Preheat oven to 375F.
  2. Place chicken thighs and about 5 garlic cloves (skin on) in a baking dish.
  3. Combine in a bowl the chopped onions, garlic, lemon juice, zest of one lemon, olive oil, oregano and dash of salt and pepper.
  4. Pour mixture over chicken. Make sure the mixture is evenly distributed and chicken is coated.
  5. Add lemon wedges on top.
  6. Bake in the oven for 50 minutes.
  7. Remove and place in broiler for another 3 to 5 minutes.
  8. Let cool for 5 minutes.
  9. Garnish with parsley and a pinch of salt and pepper.
  1. Serve over rice and a side salad.
  2. Two thighs per person.
