Snack Attack Tuesday #3 White Sweet Potato Wedges w/ Sriracha Yogurt – Taste 'N' Dash

It’s snack attack Tuesday!!  And you ask what is on the menu today?!?!?  Well… how about white sweet potato wedges with a spicy sriracha yogurt dip?!?!?

But before we get started can we talk about white sweet potatoes?  I must admit this was the first time ever having them and realizing these little guys even existed.

Yes, my friends I apparently have been living under a rock.  How did I not know about white sweet potatoes.  You could only imagine when I cut into the sweet potatoes I thought I had grabbed the wrong ones at the grocery store.  But then I took a whiff and they sure smelled like sweet potatoes.  So what do I do when I have a question???  I google it and so I did.  And low and behold there are white and orange sweet potatoes.

This little combo of potatoes and yogurt is a good one and has the right amount of spice added.  White sweet potatoes are not as sweet as the orange ones so this snack is definitely a savory one.  The skin on the potatoes gives a nice texture while the flesh of the potato is very creamy.

Okay, lets talk ingredients.  Very easy with this one.  Grab two sweet potatoes, olive oil, salt and cayenne pepper or what ever seasoning you may fancy.

Preheat oven to 400F.  Trim ends and cut into wedges.

Place into a bowl and drizzle olive oil.  Next sprinkle salt and cayenne pepper. Mix it up!

Place on a greased baking sheet and bake for 40 minutes.  Turning the sweet potatoes over at the 20 minute mark.

While the sweet potatoes are cooking lets make the dip.

Grab your nonfat greek yogurt.  I prefer the Fage brand as it has a nice thick creamy texture.  Drizzle a bit of sriracha and stir.

Remove potatoes from oven and cool for about five minutes.

Transfer to a dish or if you are like me eat straight from the baking dish.  This is a snack right….

Don’t forget about your sriracha yogurt dip.  Hmmmm so good I must say!

You can also serve these as a side dish with your main entree.

I am really digging on these white sweet potatoes.

Enjoy!
