Snack Attack Tuesday- Jicama Sticks – Taste 'N' Dash

It’s snack attack Tuesday and today I’m having jicama sticks.

For those that do not know what jicama is, Jicama is a root vegetable similar to a turnip and is part of the legume family.  Jicama is native to Mexico, South and Central America where it is commonly used in dishes.

Texture is similar to a pear or a raw white potato and is usually found in salads, slaws, soups, stir fry and/or paired with fruit.  Jicama slightly tastes like an apple but not as sweet.  A popular Mexican recipe is jicama with chili powder, salt and lime which is what I conjured up for my snack this week.

Jicama is also a great source of your daily fiber intake and vitamin C.  

You do not want to eat the skin so you must peel the skin first.  Sometimes the skin can be really thick so you may need to remove the skin with a sharp paring knife.  I was able to use a vegetable peeler with this one.

Remove the ends, cut in half and then cut into sticks, cubes or wedges depending on your dish.  I chose sticks for this snack.

Place into bowl.  Squeeze juice of one lime, a pinch of salt and 1/2 tablespoon of chili powder. Mix it up.  

This is a great snack and I love the crunchiness.  Something about a crunchy texture provides me with satiety.  Maybe because I am chewing more and eating slower that my stomach has a chance to tell my brain I’m full.  When I eat fast I tend to eat more than I should and then it’s too late.  😉
