Snack Attack Tuesday- Stuffed Endive – Taste 'N' Dash

It’s snack attack Tuesday!!  Endive is the star ingredient in today’s post.  Endive is a leafy green and part of the chicory family.  The flavor is sweet and nutty with a mild bitterness and typically used in salads.  

Endive can also be a great snack and be substituted for crackers like shown below.  The endive here was stuffed with goat cheese, chopped walnuts and green onions then topped with a drizzle of honey.

 Lets talk ingredients. Only five!!  

All you need to do is cut the root end off and separate the leaves.

Now spread about 1/2 tablespoon of goat cheese in the center, sprinkle a few chopped walnuts and green onions.

Oh yeah, and don’t forget to drizzle some honey.

Ummm the honey applicator was not cooperating much and well…. the pic tells the story.  But hey, it still came out tasty. 

This is a healthy snack and a tasty appetizer to serve at your next party.  Plus it sure is pretty!!
