The Green Goddess Dressing – Taste 'N' Dash

Did you know that green goddess dressing originated right here in San Francisco at the Palace Hotel in 1923 by the hotel’s executive chef Philip Roemer??   I had no idea until recently.  Apparently, he named the salad dressing after the actor George Arliss who was staying at the hotel performing in William Archer’s hit play “The Green Goddess”.  I love learning little tidbits about San Francisco.  

The original recipe calls for mayonnaise, sour cream, chives or scallions, anchovies or paste, parsley, lemon juice, white wine vinegar, salt and pepper.  Now, I must say the original version is very good but I’m not a fan of mayonnaise.  Something about the smell.  Gah!  

So I decided to change it up a bit and substitute the mayonnaise with nonfat Greek yogurt, the sour cream with an avocado, and added fresh tarragon.  More herbs and less fat.

The dressing came out just as good as the original.  

If you like to change up your salad dressing then I highly recommend this one.  Creamy, savory and full of fresh herbs with no weird ingredients that you can’t pronounce like most dressings you find at the grocery store.  

I had this the other night for dinner with my salad that included romaine lettuce, endive, radicchio, scallions, radishes and roasted chickpeas.  Click here for the roasted chickpea recipe.

Lets talk ingredients.  Nonfat Greek yogurt, avocado, garlic, parsley, tarragon, scallions, lemon juice, anchovies, salt and pepper.

On a side note… make sure to grab the Fage nonfat Greek yogurt brand.  This is probably the best out there.  I find other brand’s consistency to be watery and the flavor kind of blah.  

Fage is thick, creamy and not too tart.  Anytime I call out nonfat Greek yogurt in one of my recipes this is the one and only.

Okay, combine all the ingredients in the food processor or a blender.  Blend for one minute.  

 Scrape down the sides and blend for another 30 seconds.

Transfer to a jar for storing and place in the fridge until ready to serve.  Dressing will be good for about a week in the fridge.

Serve with your next salad or as a dip for your veggie.  Tastes great with chicken too!

Healthy Green Goddess Dressing

  1. 1 cup/ 8oz. nonfat Greek yogurt
  2. 1/2 avocado
  3. 1/2 cup parsley
  4. 1/4 cup tarragon
  5. 2 garlic clove
  6. 3 anchovies or 2 teaspoons of anchovy paste
  7. 2 scallions, chopped
  8. 2 tablespoon lemon juice
  9. Pinch of salt and pepper
  1. Combine all ingredients in a blender or food processor. Blend for one minute.
  2. Scrape down sides and blend for another 30 seconds.
  3. Transfer to a jar or bowl for storing and place in the fridge until ready to serve.
  1. Dressing will be good for about a week in the fridge.
